  • 1 red onion
  • 4 slices of pickled donuts
  • 2 eggs
  • 120 ml of milk
  • 4 tablespoons breadcrumbs
  • 1/2 teaspoon baking powder
  • a little grated cheese
  • 4 pcs. dehydrated tomatoes
  • green parsley for decoration

Preparation of the filling for puff pastry appetizer baskets with bacon and mushrooms

Let the puff pastry thaw at room temperature and in the meantime prepare the filling.
Chop the onion scales and heat it in hot oil until it becomes glassy, ​​then add over it, the drained mushrooms and after a few minutes the julienned bacon.
Leave the bowl on the fire until the bacon is well prepared, stirring occasionally with a spatula, then pour the ingredients in a sieve to drain the liquid.
Let them cool well.
Mix the two eggs well and dilute them with milk then add the breadcrumbs and baking powder.

I had 8 egg whites left from a cream and I didn't know what else to do: I had just finished the cake and the eclairs, I really didn't want anything sweet. I looked in the fridge and through the pantry and told myself to improvise an aperitif cake.

What I used in the egg white cake recipe:

Whisk the egg whites, add the oil and yogurt, mix gently, then add the flour in the pan. It should result in a very fluffy dough, like cake. Now add the cheese, the dishes, the red pepper, all diced and the peas. Mix lightly, pour the composition into the tray lined with baking paper and place in a preheated oven at an average temperature of 160-170 degrees. Test with the toothpick after 30 minutes and if necessary, leave a little, depending on the oven.

Leave to cool and then portion. It can be served with ketchup, yogurt, with a cup of tea or milk & hellip. It is very good and so fluffy that you feel like it's a cake.

I did not use baking powder or other loosens, if the egg whites beat very well, there is no need, but you can add a knife tip of baking powder.

You can use any kind of dishes from the refrigerator, steak leftovers, fresh, frozen or canned vegetables.


For the appetizer cake recipe you need: 6 eggs
200 g flour
200 g cheese

Method of preparation: Start by chopping the ingredients into roughly equal cubes. Put the mushrooms in an oil-free pan and keep them on the fire until the water evaporates from them. When they become soft and edible, turn off the heat.

Mix the yolks with the grated cheese, ham, peppers, olives and chilled mushrooms. Add the flour, baking powder, salt and pepper, mix well with a spatula. Separately whisk the egg whites with a pinch of salt. Add the egg white foam little by little to the previously created composition. Mix slowly until all the egg whites are incorporated until a homogeneous composition is obtained.

Pour the composition into two cake trays (size 22 cm x 9 cm x 7 cm) lined with paper, pour the dough composition up to a maximum of 3/4 of the height of the tray and level. Place the trays in the preheated oven at 190 ° C for 40 minutes.

Do the toothpick test and if necessary, leave it for another 5-10 minutes. Until it is brown and appetizing. Allow 10-15 minutes to cool before removing from the pan, then cut into slices.

The appetizer cake is eaten cold. It is a very handy delicacy and does not require special skills on the part of the one who prepares it. It is so simple that it can be prepared by a child, but it must be supervised by an adult, who can help him with the frying and baking part.
