  1. Preheat the oven to 180 C / Gas 4. Pierce butternut squash and place on a roasting tray.
  2. Cook in the preheated oven until tender, about 45 minutes. Allow squash to cool until easily handled; cut in half, scoop the seeds, peel and chop the flesh.
  3. Heat olive oil in a pan over medium heat; cook and stir onion and shallot until softened, about 10 minutes. Add curry powder and turmeric and cook until evenly coated, about 2 minutes.
  4. Stir butternut squash, apple and ginger into onion mixture; add enough water to cover. Bring liquid to the boil, reduce heat to medium-low and simmer until squash and apples are softened, about 15 minutes. Mash soup using a potato masher or blend in a food processor until squash is broken up.
  5. Mix coconut milk and salt into soup; simmer until heated through, about 3 minutes more.

Perfectly delicious! I made it as written, but only used one T. of curry powder and it came out great. I will use 1 and a half next time. It served 6. I had coconut cream instead of milk on hand but it was great. The squash took 45 min. to cook in the convection oven. It was labor intensive for me but worth the effort. Note: since making it the first time I have learned not to use red curry powder as it is too spicy for my family.-22 Oct 2016

Why make butternut squash soup when you can make curried butternut squash soup? Yes, the Thai flavors of coconut, ginger and curry are the perfect match to this lightly sweet orange squash. Before Alex and I learned to cook, I remember some friends invited us over for a cozy fall meal and made a soup like this one. I was floored that soup could taste this good. It’s silky, creamy, and warming from the inside out. It’s one of our favorite butternut squash recipes of the season (except this butternut squash risotto…and this curry and mac and cheese).

Today’s post is short and sweet. I’m in the mood to just sit and be cozy today. The house is quiet, Little One is sleeping, and I just made a pot of Creamy Curried Butternut Squash Soup.

I am feeling grateful. After a very dry summer, it is finally raining here in California. The trees, the rivers, and all the gardens are grateful. May it rain and rain and rain so the parched Earth can have a big, long drink. Without water, there is no life.

And what better way to spend a rainy afternoon than to eat nourishing soup? If you cook the butternut squash in advance, this is a super quick recipe to make. Perfect when you are short on time or have better things to do, like listen to the rain. DRIP DROP!

So here it is: my recipe for Creamy Curried Butternut Squash Soup. It’s easy peasy. It’s warm and cozy. And it’s beautiful to look at. Enjoy the nourishment!

NOTE: This recipe includes several delicious spices used to make the curry flavor. My favorite way to season soups is the use my Indian Spiced Ghee instead of having to mix the spices every time. You can use 2 TBS of the spiced ghee to cook the onions in and you are all set to go because the spices are already in there.


Tips for Preparing Butternut Squash

  • To easily prepare the squash for cooking, trim about 1/4 inch off of each end of the squash with a knife.
  • Using a potato peeler, peel the outer layer of skin off of the squash.
  • Once peeled, cut the squash in half lengthwise with a sharp and sturdy knife.
  • Clean the seeds and pulp from each half.
  • Place the cut side of each half down on a cutting board and slice the squash in one inch rows lengthwise and then in one inch rows the opposite direction to cube the squash for cooking.
  • To make preparation easier, you can also purchase the squash already cubed in the produce section of your local grocery store.


Tips for the Best Butternut Squash Soup

Pre-Cut Vegetables: You can purchase pre-cut butternut squash in order to save time. It won’t have the seeds with it to roast, but will be delicious with the peanuts – you will just have to try the seeds another time!

Fish Sauce: Please don’t skip! I feel like fish sauce has a bad rap – or maybe it’s just with Patrick who I have to hide the bottle of fish sauce from the second after I use it any recipe. What he doesn’t realize is the that fish sauce is completely necessary for authentic Thai flavor in most dishes. It adds a nutty, rich, savory, salty taste.

In fact, I added fish sauce to the butternut squash soup because it was missing a big “something” ah ha – fish sauce! So if you’ve never used it (it can be found in the Asian isle of any grocery store), just don’t smell it – and you are good to go!

Red Curry Paste: Some Curry brands are spicier than others. If you are using a more mild brand like Thai Kitchen, then I would start with ¼ cup curry paste. If you are using a spicier brand like Mae Ploy, I would start with 2 tablespoons. You can add more curry paste to taste once the soup is simmering or add sriracha to taste at the end of cooking.

Butternut squash soup is smooth and creamy. As such, you might want something crunchy to pair it with. If you want a crisp snack to munch on while gobbling up your soup, how about some nutritious kale chips?

About the ingredients

Butternut squash

You’ll need one large butternut squash, about 3 pounds. This does not have to be exact as you can always add more water or broth to adjust the thickness of the soup depending on the size of your squash.

Do you have to peel butternut squash?

Yes, while newly harvested butternut squash can have tender skin, typically it is too tough and tender. In some recipes that call for roasted butternut squash, you can roast it in the skin and scrape out the flesh.

Thai red curry paste

Thai red curry paste is a blend of flavorful ingredients like chilis, garlic, ginger, lemongrass, and spices that are blended to form a paste. You can make your own with a Thai red curry paste recipe, or you can buy it from a brand such as Thai Kitchen, which is gluten free.

Coconut milk

This is canned coconut milk not the kind from a carton. Light coconut milk works fine to save calories. Full fat coconut milk will make it richer and thicker, so you may need to add a little more liquid at the end.

Soy sauce or tamari

You can use your favorite soy sauce, but if you ned to make this gluten free, just be sure to use a brand that does not include wheat or use tamari. Coconut aminos would also work, but you may need an extra pinch of salt.

Other ingredients

The rest of the ingredients are pantry staples that you may already have in your kitchen.

  • Fresh ginger
  • Water or vegetable broth
  • Creamy peanut butter
  • Salt and pepper

Garnishes

Taking inspiration from the soup ingredients, you can set aside a little of the coconut milk and drizzle it on top, give it an extra squeeze of lime, or sprinkle on some shredded coconut or chopped peanuts for texture.

Yes, butternut squash is a powerhouse of vitamins, minerals, fiber, and antioxidants for relatively few calories. It is loaded with Vitamins A and C, and that orange color is a great indicator that it has high levels of beta-carotene. How To Freeze Butternut Squash Soup with Coconut Milk

It’s possible to make paleo butternut squash soup ahead of time in various stages. You can just roast the squash ahead of time, make the whole soup ahead and refrigerate, or even freeze it.

Can you freeze butternut squash soup with coconut milk?

Yes, you can! Simply wait for the soup to cool to room temperature, then pour into quart-size ziploc bags. Place them flat in the freezer until solid, then you can move them around anywhere you’d like. Don’t use bigger bags, because it will be difficult to reheat.

A really long time! Low carb butternut squash soup with coconut milk retains its best flavor for about 6 months in the freezer, but is safe to eat beyond that.

Next add in the vegetable broth, coconut milk, curry powder, curry paste, and salt and pepper and mix well to combine. Make sure nothing is stuck on the bottom. Close the lid, set vent to sealed mode, and set to manual mode for 20 minutes.

Once soup is done, release pressure naturally or manually (either will work). Add in the lime juice. Then, using an immersion blender, blend until smooth and creamy. You can also transfer to a blender or food processor and blend in multiple batches if needed.

Finally, top with some toppings (my favorite part!) and enjoy! I like topping with coconut milk or yogurt, hot sauce, cilantro, and chopped nuts or crackers for some crunch.

Can you Freeze Butternut Squash Soup

To freeze, let the curried butternut squash soup cool completely. Pour into glass jars (I love these weck jars). Leave about an inch of space at the top between the soup and the lid so it has room to expand. Place in freezer and when you are ready to eat, let defrost in the fridge or in the sink for a few hours. Then just heat in small saucepan or the microwave.

It should last in the freezer for 3 months.
