Roasted Fennel, Carrots, and Shallots Recipe

Ingredients

  • 3 3- to 4-inch-diameter fennel bulbs, tops trimmed, fronds reserved
  • 4 tablespoons extra-virgin olive oil, divided
  • 8 long slender carrots, peeled, cut on deep diagonal into 1/4-inch-thick ovals
  • 12 1- to 1 1/2-inch-diameter shallots, blanched 1 minute, peeled, cut in half through root end
  • Chopped fresh Italian parsley

Recipe Preparation

  • Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 425°F. Brush 2 large rimmed baking sheets with oil; warm sheets in oven 10 minutes.

  • Quarter fennel bulbs through core. Cut each quarter into 3 wedges; place in large bowl. Add 2 tablespoons oil, sprinkle with salt and pepper, and toss fennel to coat.

  • Combine carrots and shallots in another large bowl. Add 2 tablespoons oil, sprinkle with salt and pepper, and toss to coat. Spread fennel on 1 hot baking sheet and carrot-shallot mixture on second sheet. Return sheets to oven; roast vegetables 10 minutes. Reverse sheets. Roast vegetables 20 minutes. Turn vegetables over. Roast until tender, 10 to 15 minutes longer.

  • Arrange vegetables on platter. Sprinkle with parsley. Garnish with fennel fronds.

How to Make Easy, Wholesome Galette Crust

I’m crazy about the crust in this recipe. The entire thing gets whizzed up in a food processor and is easy to roll out. Half the flour in the dough is whole-wheat, which gives it a boost of fiber and nutrients and a lovely deep color, while still remaining tender and flaky.

Even though this pastry is easy, it’s important to be attentive to a few factors:

Measure properly: Be sure to spoon your flour into the measuring cup and level it off with the edge of a knife. Don’t jam your measuring cup into the flour bin or pack it down.

Use cold butter and ice water. Keeping your pastry cold is part of what makes a flaky crust.

Chill the dough before baking: Be sure to make the dough first and get it into the fridge before you prep and roast the vegetables. That will give it a good 45 minutes to get cold before you assemble the galette.


Convert Food Recipe to Spreadsheet

Looking for ideas to convert a typical food recipe to a spreadsheet. I would like to use the sheet to size the recipe up and down and want to portion out in grams.

My first thought is to use the main ingredient (in the case below, crab meat) as 100% and everything else as a percentage of that ingredient. I am prepared to weight each ingredient to describe it in a grams instead of cups.

To make the Crab Cakes, you will need:

- 1 pound fresh blue crab meat, preferably all lump (a mix of lump and claw also works well, and is almost as wonderful. It's just different).

- 1/4 Cup crushed saltines (about 10 crackers)

- Salt to taste. We use 1/2 tsp./lb. of crab.

- Permissible additions: 1/4 tsp of Old Bay seasoning, cayenne pepper, Dijon mustard or Worcestershire sauce (pick no more than two)

- Butter (please, please cook them in butter)

Sounds like a reasonable plan to me. I then might add another cell for servings and have the amount of crab meat based off that.

Yes, I thought it would be beneficial to note something like this. “122g = 1/2 cup bread crumbs”. This should help to know the approximate amount in cups, teaspoons, etc. for estimating the needed ingredients.

My scale isn't super accurate for fractions of a gram so I have formulas to go back to teaspoons. They round to the nearest 1/16th teaspoon.

For example =DIVIDE(round(C26/F26 * 16), 16) where C26 is grams, and F26 is grams/teaspoon. For the format of the cell I use ?/?? which gives me nice looking fractions.

You could do the same thing with cups.

Dan, I've been using Pepperplate for years and it is terrific. I've got 565 recipes in it. Each recipe has the number of servings and can be scaled up or down. It includes a shopping list, menus and a planner. Worth a look for ideas at the least. Scaling is not based on the main ingredient.

I've always written out recipes as word docs and just scaled up or down manually - not efficient. Used to use pro software but never liked it much. This Pepperplate looks like a ringer - thanks, Gavin, downloaded!

Crispy Soft-Shell Crab with Roasted Corn Cake, Sherry-Bacon Butter Sauce

Rice flour, seasoned with salt, pepper and minced parsley

Roast Corn Cake

8 ears of corn
3 quarts milk
½ cup butter, cubed
2 large onion, minced

2 tsp fennel seeds
3 cups cornmeal
2 tsp salt

Cut the kernels off the corn ears. Break the cobs into large pieces and place in a stock pot. Cover with milk and bring to a boil. Reduce the heat to simmer and continue cooking for an hour. Separately, in small rondeau, melt the butter. Add the onions and the corn and stirring frequently, brown over medium heat until barely caramelized.

While the onions and corn are cooking, toast the fennel seed. To a dry pan over a medium high heat add the fennel seeds. Shake the pan until the seeds begin to brown slightly and give off a distinct aroma, happens quite quickly. Grind the seeds and add the (sifted) powder with the garlic to the corn and onions. Saute briefly. Add the corn-infused milk and bring to simmer. Add the salt. Add the cornmeal in a slow and steady stream stirring it constantly with a whisk as it is added. As soon as all the cornmeal is added switch to a wooden spoon and continue stirring until the mixture thickens and pulls away from the sides of the pot. Pour the mixture into a shallow pan, pat it down evenly and place it in the refrigerator to firm up. Once the pudding is firm, cut it into small (2”) circles using a small biscuit cutter. Sauté in butter at service.

Sherry-Bacon Butter Sauce

3 cups leeks, white part only, 1/4” mirepoix

3 cups white mushrooms, bottom of stem trimmed, ¼” mirepoix

3 cups lobster stock* (note: low sodium chicken or vegetable stock, with a touch of clam juice, would also work - just mind finishing salt seasoning and adjust accordingly. If you have access to shells of any crustacean, the stock is incomparable. See below).

1 ½# bacon, brunoise, cooked until just crisp drained

Melt 3 tbsp of the butter in rondeau. Sweat shallots, leeks, carrots and mushrooms for about 5 minutes. Add stock, salt, and pepper and bring to a boil. Boil gently over medium heat for 8-10 minutes. Strain through chinois. Discard vegetables. Combine strained stock with sherry vinegar and reduce to about 1 ½ cup. At service, mount remaining 9 tbsp butter as with Beurre monté and season with salt and pepper to taste. Fold in bacon and reserve.

Crabs - freshly killed and trimmed.

“Confetti” of red pepper and green-part-of-leek brunoise

Dredge crab(s) in milk, then flour, shaking off excess. Heat oil in black steel pans over medium-high heat to hot. Slide crabs in, shell side down shake pan a bit to loosen crabs, and cook - about 3 minutes per side. Check to ensure flour is cooking brown and crispy, but not burnt, and adjust heat accordingly. Transfer to plate covered with paper towels and pat gently. Meanwhile, sauté cakes in butter. Place cake in center of plate, place crab on top, sauce and dress with confetti. Place a few kernels of sel gris and serve.

we're sitting here in the midst of a (non) blizzard, hunkering down in this super snowy, windy, and frigid weather. we got up this morning to take our little pup, quint out for a walk, needless to say he wasn't happy. we're not sure he's really into snow, as he runs away from us when we attempt to put his little black turtleneck sweater on, and when we try to squeeze his dainty feet into snow shoes he hates it even more. it's become a 10-15 minute process, depending on if it's both me and frank or just one of us, all for a 2 minute "walk" consisting of quint trotting in circles and finding the nearest vertical object to relieve himself on. we come back inside and the timid dog he was outside quickly disappears into a bold, playful pup zipping around the apartment, sometimes hopping on all fours, and poking us with his tiny snout encouraging us to play with him. most times you can find frank on the floor with him playing as if he were a dog as well, and as i'm sure you can imagine, quint is always totally delighted by that. we're constantly so amazed at how such a little guy can have such a tremendous personality - he's totally filled with life, and brings us so much love and light each day! this week, just under a year ago we picked him up at the shelter, all 7 3/4 pounds of him, so me and frank are reflecting a bit on how special he is, while also wondering what our lives were like before him :)

while quint isn't a fan of veggies (he actually eats around them), he is a big lover of apples - i often mash a couple slices up for him, which he loves to crunch on. most meals i have to be careful of setting them at a height he can reach, but salads never worry me - i know he'd rather occupy his time doing other things like playing with his reflection or chasing his tail. this carrot-centric salad is super simple, but also super tasty, with crushed fennel, sweet caramelized shallots, crunchy apple, and a respectable amount of blood orange juice to top. it was inspired by a salad over at vinegar hill house, and it's one of those little dishes that continues to have flavor, texture and depth in each bite, while also being really simple to put together and enjoy. plus, it's a salad served on the warmer side of spectrum, for these chilly days when thinking of eating something cold is just a no-go.

this is the perfect salad to serve warm or at room temp. also, feel free to use larger carrots as opposed to the baby ones indicated below, just make sure to adjust cook time if need be. and i could also imagine this dish benefitting from more crunch, perhaps roughly chopped hazelnuts or roasted pistachios

We used fresh oregano in these recipe photos because it is what we had on hand, but fresh or dried basil, thyme, or rosemary would also be delicious.

❓ Recipe + ingredient questions

Any type of carrots will be delicious roasted. We prefer to roast larger carrots like Tendersweet and Touchon carrots, but when we want a good variety of colors we choose Kaleidoscope carrots.

As long as you wash carrots well, you do not need to peel them before roasting. In fact, unpeeled carrots are delicious because the outer layer browns when baked and provides deeper flavor through a process called the maillard reaction when the natural sugar in carrots is heated.

Carrots can be roasted whole, cut longways (or lengthwise) into halves or quarters, or cut along the length of a carrot into rounds or thicker 2-3 inch (5-7 cm) long pieces.

Like many vegetables, broccoli's flavor transforms when roasted. Broccoli becomes soft and has a mellow, yet somewhat sweet flavor when browned in the oven.

You do not need to blanch broccoli before roasting, but blanching will help the sprouts retain their green color when cooked with high heat.
